Lemongrass grows wild in Indonesia, Indochina and tropical Australia; and it is a fast growing, tall, aromatic grass. Its leaves are green with sharp edges much like lawn grass but much broader and larger. Lemongrass grows to a height up to 5-feet and it belongs to the family Gramineae and the genus Cymbopogon.
It has been cultivated in Southeast Asia and Sri Lanka as a culinary herb and in India as a beneficial plant for thousands of years. Traditionally used as a spice in Thai and Indian dishes with its citrus and rose notes.
In some cultures Lemongrass was known for its ability to reduce fever; thus, it earned the name “fever grass”. In East India and Sri Lanka, Lemongrass was historically used to make a beverage called “fever tea,” which was intended to treat not only fevers but also diarrhea, irregular menstruation, stomach aches and skin infections.
Ayurvedic practitioners in India have used Lemongrass medicinally for thousands of years, although the first recorded distillation of Lemongrass occurred in 1799 in The Phillippines.
Properties:
It has been used as a flavouring agent in beverages, desserts and other culinary dishes such as soups and curries, for its ability to promote better digestion, boost circulation and immunity, treat infections, and relieve irregularities in menstrual cycles.
How to use:
1 teaspoon of Lemongrass to one cup of boiling water. Steep for 15 minutes, strain and drink up to three cups a day.
Often used in food and tea blends for its lemony flavour. Combine Green Tea with Lemongrass. Lemongrass adds a very nice citrusy flavour and aroma while the highly oxidized Green Tea is much more mellow.

Consuming high amounts of lemongrass may cause dizziness, drowsiness, dry mouth, excess urination and increased appetite
